I did a similar search yesterday typing in the phrase VLC media player help and they do have a wiki with all of their documentation there including a table listing all of the available hot keys. Since it is an open source project, some of the writing is dated, I believe that one of the files was last updated as far back as 2011 with no updates since then though. The program itself, uses the classic windows graphic user interface and as you arrow through the menus, the corresponding keyboard shortcuts are presented to you so if push comes to shove, you can with a degree of patience create your own custom sheet tailored to your needs.
