The way NVDA uses the OCR is the same as the original add-on. It only reads the screen, so you'll need something else to scan directly (having said that, you could scan an image from your scanner and use NVDA to read the results - not quite a one step process, but potentially useful for scanners which only come with an image scanning program?)
To use the NVDA feature, locate a graphic (on a web page, an inaccessible PDF, etc), and press NVDA+r. Where it differs from the addon is that the addon uses the review cursor, the Windows 10 feature uses the regular navigation keys (eg the arrows to move around the scanned text.
The OCR itself is a feature built into Windows 10, so it's possible there are other programs at there which can scan directly, I must admit I haven't looked into it.
