From NVDA's "Tools" menu (press NVDA+n, then T) choose "Create Portable Copy" (Press C or arrow to it and enter).

Specify a directory to save to, and be sure to check "copy current user configuration".

When restoring Windows 7, you will need have Windows 7 SP1 for the current version of NVDA to run (from NVDA 2018.4 and later).
