yeah can say give them a brake all you like but I won't it's not like
Itunes has just now started having issues. They have just gotten
worse.

You can instal the updated version of ITunes. But run it in a different
folder. If you find it doesn't work for you. Then go back to the old
version
after you uninstalled the new version.

I think you are right about not being able to go back once you've
upgraded, but to the best of my knoledge, you can put off the upgrade
as long as you like.
