I believe you are asking how you can turn off column and row announcements in tables.
To do that, you want to go to your Document Formatting settings, and uncheck "cell coordinates".
The short way of getting there is: NVDA+Ctrl+D, alt+O. Space to uncheck the box, then press enter.
Your period question has already been answered, and I don't know about auto suggest lists in Outlook, so can't help there.
