After you've hit NVDA+N,P,P to open the Punctuation & Symbols dialog, you will land in the list of symbols.  Immediately above that, reached by SHIFT+TAB (or ALT+F from anywhere in the dialog itself), is the Filter by edit box.  Type the word dot in that edit box, and what will be left in the symbols list below it are only things where the word dot is used in the replacement text for the symbol.  You then need to go through the symbols list to change the replacement text for the ones you want.  I changed the two items for a sentence ending period and a stand alone period (both of which had had the replacement text of dot initially).
