Microsoft 365 can be thought of as akin to any other subscription software
in that there is an installed component and, so long as you're subscribed, a
perpetual update agreement.

Microsoft 365, and all the programs you have based on your subscription, are
resident on your machine and can be used whether you happen to have an
internet connection or not.  And that's dirt simple for anyone who has it to
test out.  Simply disconnect from the internet and try firing up any one of
the Office programs you have as part of an active Microsoft 365
subscription.

Just as you can log in to a Microsoft Account linked Windows 10 or 11
Account without any internet connection, you can use the Office programs
that come with M365 in that state, too.
