There are two apostrophes and two exclamation marks. Type each of those symbols in the search box to find them, and change both.

NVDA doesn't have a restore defaults button in that dialog, but this
will work:
1. Find your user configuration directory. If you're using an installed
version of NVDA, Pressing Windows+r and typing %appdata%\nvda should put
you there.
2. Delete symbols-en.dic.
3. Restart NVDA.
