There is also the malicious tool removal. From the run dialog box, type mrt.exe and hit enter and follow the prompts.

NVM, got it sorted, finally. It still gave me an update popup but I told
it "Not Now" and then turned off automatic updates in the options. I was
worried I'd never get my comfortable Skype space

I uninstalled again and restarted the computer, but there's still a
Skype folder in appdata roaming. Should I delete that before attempting
to reinstall?

I understand that Skype have moved to new protocols. There may be architectural reasons why Microsoft decided to redesign it, and they decided to update/modernize the user interface along the way.
