It should work fine "out of the box". I don't have Jaws to test with, but are you closing Acrobat before exiting Jaws and starting NVDA?

The answer to your question is, "No," if you are literally trying to append to the clipboard.
That being said, if you're a Windows 10 user (it may even be in Windows 8.1) you can use Clipboard History

This is almost certainly an issue with using Windows Live Mail with Gmail, not NVDA or JAWS related. I do not know whether turning on the "Allow Less Secure Apps" setting on Google

I can post using GMail and Windows Live Mail. Not being supported has nothing to do with whether a program will still work.
