I use Outlook 2016 with NVDA and it never crashes!
I wonder if your Outlook.pst file is full or corrupted? This can be due to the impact of certain emails coming into it
I have various suggestions on how to avoid creating blank lines in outgoing messages but not on incoming ones. Have you tried NVDA + down arrow for reading emails quickly? This avoids speaking any blank lines for me. ?

I have 2 questions for others who use Microsoft Outlook with NVDA.
Does anyone have any suggestions on how I can improve my NVDA/Outlook experience? I’ve briefly tested with JAWS, and JAWS is much better at ignoring the blank lines. However, I don’t own or particularly want to use JAWS. Thanks, Amelia

I don’t know how you will find moving in this way but move by paragraph is
control down arrow. You can see if that skips blank lines and moves you to
the next paragraph. And blank lines or not, moving by paragraph is a good
way to skim.
As far as crashes are concerned, have you tested Outlook with another
screen-reader enough to know if some sort of interaction between NVDA and
Outlook is causing the crashes?
If NVDA appears to be involved, sending the NVDA log to someone may help
solve the problem. If it isn’t involved, you may be able to send a Windows
log to someone.
